Both the processing of the milk and the production equipment are totally computerized. This kind of technology permits to keep all the steps of the production process constantly under control. For each sort of cheese it is necessary to set up a parameter, to be more precise the recipe, decided by the technical staff: every day the incoming milk is analized and destined to the following day production. Depending on the results of milk analysis the Casaro, every evening, sets on the computer the parameters for the following day production, that starts at 4 a.m. Once he sets the parameters, the computer gives the input to the production equipment to execute the work with a semi-automated system. We say “semi-automated system” because we really believe in the human touch. In the most important steps, as a matter of fact, the machine asks the Casaro the authorization, before going on to the following stage. In this way we can make corrections, if necessary.All the equipment is on the cutting edge, planned according to the most up-to-date technologies and the strictest healthy standards.
